Fenugreek potato vegetable recipe for plant based family!

Fenugreek is a very famous herb and due to its unparalleled medicinal properties, it is also used in Ayurveda very popularly. Fenugreek contains high quantities of minerals, such as iron, magnesium, phosphorus, manganese, and copper, along with many powerful futures-nutrients. Apart from this, it also contains Vitamin B 6. Effective antimicrobial, antioxidant, anti-inflammatory, anti-diabetic and antiviral properties are found in fenugreek seeds. Fenugreek seeds are used for cooking as well as for medicinal purposes. The seeds of fenugreek are known for a sharp flavor and fragrance and people also add fenugreek to their easy vegan meals.

So let's make a cup of fenugreek recipe today with potato. Fenugreek potato curry is not only delicious but also very nutritious, whenever anyone making Fenugreek potato curry, its fragrance spreads far and wide.

Necessary ingredients

Green leaves of fenugreek - 250 grams
Potato - 250 grams (3-4 potato medium size)
Mustard oil - 2 tablespoons
Asafetida - 1- 2 Pinch
Turmeric powder - one quarter teaspoon
Coriander Powder - Half a teaspoon
Green Chilli - 2 (Finely Chopped)
Red Chilli Powder - Less than one quarter teaspoon
Salt - according to the taste (half a teaspoon)

Method

Break the stems of fenugreek and clean it and keep the leaves clean with clean water, sieve or strain the plate and keep it in it so that the water on the leaves will go down after that cut it finely.
Peel the potatoes and wash them and make 8-10 pieces of each potato.
Now heat the oil in the frying pan and fry it with asafetida and cumin seeds. After that add turmeric powder, coriander powder, green chilies, salt, and potato and fry it with a spoon until it becomes coating of spices on the potato. Now mix 2 teaspoons of water in it and cover it and cook it for 5 minutes on low flame.
Now open the lid and put fenugreek, salt, and red chilies and stir well. After that, add 1-2 spoonful water and cover the vegetable with 5 minutes on slow gas. Now open the vegetable and check if the potatoes are tough then cover the vegetable again and cook for 3-4 minutes on low flame.
Fenugreek potato vegetable is ready. Now, take it out in a bowl and serve it rice.
